Pretty much all the music from Cowboy Bebop. That band, The Seatbelts, is just so versitle. They seem to play any genreout there, and play it good!

Amazing...

Seconded. The music from .hack//SIGN is beyond astounding. I personally like "The World", "Aura", "Key of the Twilight", and "Fake Wings".

Also, the music from Bebop and One Piece are unique in their own ways. Bebop is filled with amazing music from the older generations, back when it was good, and One Piece has a bunch of different genres and the cast of the show sing a lot of the songs. Though the cast only ever sang "We Are!" in terms of openings/endings, they sang every other song. Even the minor-ish character Django the Hypnotist got a song for himself to sing!

ALL OF THESE. I am a sucker for a good soundtrack.
Probably my top fave soundtrack is FLCL though. With Bebop, .hack, and FMA following closely. (Not a huge fan of the FMA anime, but the "Bratja" piano solo ALWAYS give me chills. There are some great piano peices in that show.)

Oddly enough, Azumanga Daioh soundtrack has a few gems on it as well...

i like metal so any japanese metal is verry nice i think one of bleach's openings was
and i really liked that but dont know the name of it

Amazing...

Indeed, but I actually prefer the music from .hack//Roots performed by Ali Project (as well as "Silly-Go-Round" by FictionJunction YUUKA). Their up-temp songs are extremely catchy and their slower songs beautifully sad. Very good stuff.

Bleach has a very good track record with theme music, better than Naruto's record (which isn't all bad either, but there's also more than a few lemons in there).

Very few things beat the opening to Full Metal Alchemist, "Ready Steady Go" by L'Arc-en-Ciel.

The opening to Kyouran Kazoku Nikki is unusually catchy in it's own unique way and the character-specific ending themes sung by the characters with their accompanying videos are fantastic.

Bamboo Blade's opening and ending themes are pretty good, they're both sung by the girls in the kendo club and they do a really great job at it.

However, as good as these songs are the one song that I always go back to is the Tenchi Muyo! Ryo-Ohki OAV 2 English opening theme "I'm a Pioneer" by Sharyn Scott. There's just something about the energy and message in that song that makes me happy every time I hear it.

The theme to NieA_7 is excellent. I have it here Niea_7 opening theme. Kinda has a folk sound to it I think.

I happen to like most of the Gundam music, and Full Metal Alchemist as most of it is Chopin and Lizt. :)

La Portrait de Petite Cossette, the Utena movie soundtrack (Toki ni ai wa is a beautiful song), Trinity Blood, Magic Knights Rayearth, and Rozen Maiden.

Other than that, most of the time my music obsession lies with video game music. Such stuff includes Legend of Zelda, Smash Bros Brawl, and stuff done by Nobuo Uematsu (his celtic remakes of FFIV tracks were beyond breathtaking), plus The Black Mages.
